I use the term store cupboard<\/i> loosely as we keep most of our veg in the fridge if there’s room.\u00a0This is a really cheap veggie meal recipe that slipped off our menu radar for years until this week when I was trying to plan some balanced family meals for the week ahead.<\/span><\/p>\n Serves 6<\/span><\/span><\/p>\n Ingredients<\/span><\/b><\/p>\n 15ml (1 tbsp.) olive oil<\/span> 115g (1\/2 cup) red lentils<\/span> Method<\/span><\/b><\/p>\n Roughly chop all the vegetable ingredients, then\u00a0add them to\u00a0a food processor and chop more finely.<\/span><\/p>\n
\n1 onion<\/span>
\n4 carrots<\/span>
\n2 sticks celery<\/span>
\n4 garlic cloves<\/span>
\n400g (14oz) tin chopped tomatoes<\/span>
\n300ml (1\/2 pt.) vegetable stock<\/span><\/p>\n
\n5g (tsp.) basil<\/span>
\n5g (tsp.) oregano<\/span>
\nSalt & pepper<\/span><\/p>\n
