If you look around vegetable gardens at this time of year, they\u00a0can look bereft of veg apart from a few lanky looking winter greens; however anybody who grew winter varieties of leeks will be reaping their reward now, as they’re very much in season.<\/span><\/div>\n
I wrote a blog about growing\u00a0leeks <\/a>last year and h<\/span>ere are two more\u00a0recipes we made this week that are quick and easy (I\u00a0made them both at the same time\u00a0as the stove was on, and half the preparations were\u00a0complete).<\/em><\/span><\/div>\n

Leek Gratin <\/span><\/span><\/b><\/div>\n
(Serves 4)<\/span><\/div>\n
Ingredients<\/span><\/i><\/div>\n
2 large leeks with thick leaves removed and saved<\/span><\/div>\n
20g butter<\/span><\/div>\n
20g flour<\/span><\/div>\n
1 tsp. Dijon mustard<\/span><\/div>\n
250ml. milk<\/span><\/div>\n
Grated cheese<\/span><\/div>\n

Freshly grated nutmeg<\/span><\/div>\n

Method<\/span><\/span><\/i><\/div>\n
<\/div>\n
Chop the dark leaves off the leeks and save. Slice the remainder in half lengthways through to the middle and wash under cold running water. Steam\u00a0gently for about five minutes.<\/span><\/div>\n
<\/div>\n
Meanwhile make a white sauce by melting the butter in a saucepan, then adding the flour and mustard, mix until combined then add the milk, stirring until it boils. (If it\u2019s too thick add a little more milk, too runny add more flour.)<\/em> Simmer for a few minutes.<\/span><\/div>\n

Grease a gratin dish lightly and place the steamed leeks into it. Pour over the sauce then add grated cheese and freshly grated nutmeg to the top.<\/span><\/div>\n

Place in a pre-heated oven at 200oC for about 20 minutes or until the gratin is golden.<\/span>An optional extra for this is to wrap the leeks in ham after they’ve steamed and before the white sauce\u00a0has been\u00a0poured on top.<\/span><\/p>\n<\/div>\n

Leek and Potato Soup<\/span><\/span><\/b><\/div>\n
<\/div>\n
Ingredients<\/span><\/span><\/i><\/div>\n
<\/div>\n
\"\"<\/a>Remaining leaf tops from the leeks above<\/span><\/div>\n
20g butter<\/span><\/div>\n
4 potatoes, peeled and roughly chopped<\/span><\/div>\n
Garlic<\/span><\/div>\n
1 litre stock<\/span><\/div>\n
Seasoning<\/span><\/div>\n

Method<\/span><\/em><\/span><\/div>\n
<\/div>\n
Melt the butter in a saucepan, add the roughly chopped leek and garlic put on a lid and cook gently until softened. <\/span><\/div>\n
<\/div>\n
Add the potatoes, stock and seasoning and cook until the vegetables are soft.\u00a0 <\/span>Remove from the heat and allow to cool for a few minutes before\u00a0liquidising.<\/span><\/div>\n
